The flat white is the drink that put Australian coffee on the world map. Born in Melbourne and Sydney in the 1980s, it spread to London, New York, and eventually everywhere coffee is taken seriously. At Skippy, it's the reason the van exists.

We pull a double ristretto, a shorter extraction than a standard espresso, concentrating the sweetness and body while leaving bitterness behind. That shot goes into a 150ml cup over silky, velvety microfoamed whole milk. The result is a smaller, stronger, more intense coffee drink than a latte, with the espresso clearly driving the flavour.

If you've only ever had flat whites from chain cafés, you may not have had one made properly. The difference is significant. Made right, a flat white should taste sweet, round, and distinctly of coffee, not of milk, not of roast, and not of anything else.
